Easy Flatbread Breakfast Pizza

This easy flatbread breakfast pizza made with fluffy scrambled eggs, ham, bacon and cheese is a perfect way to start your day. Packed with protein and full of flavor!

This breakfast pizza is one of my favorite breakfast meals because it is super easy to make, packed with protein and the toppings can be made ahead of time.

As I work from home I can get lazy with breakfast. It is easy to grab a carb filled muffin or bagel, but that leaves me feeling sluggish. When I start the day off right I feel better and get more work done. Exercise is another story!

My daughter and I have been working on eating healthier and a big part of that is meal prep. Sundays is the perfect day to cook up some bacon and scrambled eggs for the week.

The best way to cook bacon ahead of time is in the oven. Simply place a piece of parchment paper on a sheet pan and bake in a pre-heated oven at 400 degrees for about 20 minutes.

One reason I love this flatbread pizza is you can customize it to your liking. Not a fan of ham; replace it with sausage or leave it off altogether. My daughter loves to add sausage, spinach and feta cheese to hers.

You can also add extra veggies like peppers and onions. Switch out the cheese to your favorite.

Also, I am cutting back on carbs so I use Flatout, but this recipe works with any kind of flatbread.

Ingredients for Flatbread breakfast Pizza

You can even make your own dough if you like or buy a pre-made dough.

Ingredients:

  • Premade Flatbread – I use Flatout for a low-carb option
  • 2 cups scrambled eggs
  • 1/2 cup cooked cubed ham
  • 1 cup red onions, sliced thin (optional)
  • 1/2 cup bacon
  • 1 cup shredded cheese (any kind), divided
  • green onion for garnish

Spread half the shredded cheese over the flatbread.

Cover with scrambled eggs.

Add ham, bacon, and onion on top.

Cover with remaining cheese.

Bake in a 350 degree oven for approximately 7 minutes, or until cheese is melted and ingredients are heated through.

Garnish with green onion and serve immediately.

Note: Depending on the size of your flatbread, the ingredient quantities may need to be adjusted.
