Let the air fryer do all the work! If it’s one thing I try to avoid in the hot summer, it’s turning on the oven. My air fryer has been my best friend the past few weeks.
My dad gave me several large zucchini and squash from his garden and I couldn’t wait to cook them up.
I wanted a simple, healthy and flavorful side to go with chicken, pasta and steak.
You can’t get much easier than this air fryer zucchini and squash dish.

Ingredients for Air Fryer Zucchini and Squash
- Zucchini (Fresh Only!) – Skip the frozen stuff—fresh zucchini gives you that perfect bite and texture that frozen just can’t match.
- Yellow Summer Squash – Sometimes called crookneck squash. Mexican grey squash works too if that’s what you’ve got on hand.
- Olive Oil or Spray – Use whatever version you prefer—either a drizzle of extra virgin olive oil or a quick spritz gets the job done.
- Kosher Salt – My go-to for cooking! It’s more forgiving than table salt, so it’s great for seasoning without going overboard.
- Black Pepper – A few fresh grinds bring just the right amount of warmth and flavor.

How to Cook Zucchini and Squash in Air Fryer
Pre-heat the Air Fryer: Pre-heat your air fryer to 450 degrees F. I am using the Cosori Air Fryer Toaster Oven.
I love that it is a large size so you can make enough for a family if needed, or store extras for meal prep, which is what I do.
Cut the Zucchini and Squash: Start by cutting the zucchini and squash in 1/2″ thick slices, then cut again in quarters.

Add Seasoning: Coat the summer vegetables in olive oil, salt, and pepper in a bowl and blend well.
Place in Air Fryer Pan: Place the veggies in a single layer in the air fryer pan.
Cook the zucchini and squash at 450 degrees F for 6-7 minutes. Flip, then cook for another 6-7 minutes.

Serve Immediately: Serve right away or keep in the refrigerator in an airtight container to use later. They are yummy on their own, but are also extremely versatile to use in other dishes.
I mixed them with fresh tomatoes and feta cheese and used them in a grilled chicken and pasta dish.

Storing & Reheating Tips
- Fridge: Pop any leftovers in an airtight container and store in the fridge for up to 4 days.
- Freezer: You can freeze them, but heads up—the texture gets a bit mushy. Best to toss frozen squash into soups or stews where it won’t matter as much.
- Reheating: For the best texture, reheat in the air fryer at 400°F for a few minutes. The microwave works too, but expect them to come out softer.
